OK, quit laughing and listen up.  Yes, it is bolo but it is fabulous for sandwiches and salads.  We have found a 3 LB chunk is the perfect size to smoke.  Slice it thick or thin, cube it and serve with cheese and crackers.  Nothing impresses folks more than a 74 Smokehouse smoked bologna charcuterie board!
